Phase One Diet

Once again congratulations to you that have joined the National Phase One Diet (or Phase Two) challenge. You have made your commitment to this effective anti-fungal diet by joining the challenge. There are over thousands that have committed to better health with this program, and over a third is from Michigan!

Many of you committed to this health giving diet in January - a natural time of the year to commit to doing something good for yourself. Keep up the good work and continue doing what has proven effective for so many.

When we are reminded just what fungus (and mold, mildew and yeast) and their mycotoxins (toxic byproducts of fungi) can do to our health, it is easy to gain a renewed commitment to the diet and to the antifungal program. The list is overwhelming, but not to fear. Our magnificent bodies want to be well so they respond beautifully and efficiently when the cause is removed. Following the antifungal program gives the body the opportunity it needs to be well.

The anti-fungal program includes the following steps:

  • #1 Starve The Fungi
  • #2 Move Your Bowels
  • #3 Repair the Damage
  • #4 Kill the Fungus
  • #5 Exercise!

Step #1 is the focus of the national diet challenge. Step 1 is starving the fungi with an antifungal diet. Doug Kaufmann's *Phase One Diet is an extremely effective antifungal diet. Sugar fuels the growth pattern for fungi. The Phase One diet is a low carbohydrate diet that dramatically cuts back on sugar that feeds fungi. Although carbohydrates are known to be fuel for the body, this is true only in a non-toxic individual. In a fungally-toxic individual carbohydrates actually suppress energy.

The Phase One diet is also very low in mold/fungi infected foods and high in foods such as vegetables, which are known to carry out mycotoxins and inhibit their toxicity. If you are not familiar with the antifungal program, pick up one of Doug Kaufmann's Fungus Link Series for more information. In addition to the Fungus Link, my next "tool" for implementing the program is my favorite antifungal cookbook, Eating Your Way to Good Health (also by Doug Kaufmann). After thumbing through some of the pages and recipes, one readily sees that this diet is not boring and is easily implemented. Simply know the allowed foods and get creative!

Some of my favorite recipes are:

  • Debbie's Fruit Bowl
    2 Granny Smith apples, cored and cut into large chunks
    1 cup (10) strawberries, halved and sliced
    1 ¾ cup blueberries
    ½ teaspoon cinnamon
    ½ cup pecan pieces, chopped
    ½ cup plain yogurt
    1 tablespoon melted butter
    ¾ teaspoon lemon peel
    1 tablespoon lemon juice
    ½ cup fresh grated coconut
    Stevia to taste

    Wash, core and dice apples. Sprinkle well with a teaspoon of lemon juice to prevent them from browning. Combine apple pieces with strawberries, blueberries.

    In a separate bowl, combine yogurt, cinnamon, butter, lemon peel, coconut, and Stevia. Fold this mixture in with the fruits and chill for 20 minutes. Serve topped with pecans and cinnamon. Makes 4-6 servings.

  • Roasted Lemon-Herb Chicken
    This makes for an easy dinner. Just squeeze lemon over the bird, rub in the spices and baste it once or twice while it's in the oven. Add some chunks of vegetables to roast alongside during the last 30 minutes.

    1 large lemon
    1 broiler-fryer chicken (3-3 ½ pounds)
    Several sprigs of thyme (or rosemary or oregano)
    1 tablespoon lemon-pepper seasoning
    1 tablespoon chopped fresh thyme (or rosemary or oregano)

    S lice lemon in half and squeeze juice over chicken. Insert lemon halves and thyme sprigs into the bird's body cavity. Brush chicken with olive oil and rub it with the lemon-pepper seasoning and chopped spices. Place chicken breast side up on a greased rack in broiler pan, or on a vertical roasting rack. Roast at 400 degrees for 45 minutes or until desired doneness, basting once or twice with drippings from the pan. Makes 4 servings.

  • Doug's Favorite Meal
    1 tomato, diced
    1 small onion, diced
    1 cucumber, diced
    1 avocado, diced
    ½ cup black olives, diced
    3 hard boiled eggs, sliced
    Smoked salmon or cubes of beef summer sausage
    Olive oil or grape seed oil
    5 tablespoons freshly squeezed lemon juice

    Dice and combine first six ingredients, add sliced boiled eggs and smoked salmon. Top with olive oil and freshly squeezed lemon juice. Makes 2 servings.

Some other favorites are Wahoo cheesecake, roasted pecans, cinnamon roasted almonds, Blackened Fish, Halibut in Pepper Sauce, Steak Salad and Stir-fried Broccoli & Carrots.
