Doug KaufmannQ…Hi Doug: I have all the typical symptoms of a yeast invasion. I had it years ago and I finally got rid of it, through diet and vitamins. I do not take any antibiotics, and I eat reasonably well. My stress level is high, and just recently I had a flare up that really put me back. I take probiotics, olive leaf, oil of oregano in capsule form along with other vitamins. I would like to go on your Phase One and Two diet, but cannot find it anywhere. I want to do this all naturally, and not with any type of medicine. I am 62 years old. I am overweight, but in good health. I do not take any medications, but this yeast thing is taking over my life. A…Hi Arlene! It is so unfortunate that physicians do not understand fungal diseases let alone the catastrophic impact that fungi can have on health. Stress contributes to dips in immunity, and while down, opportunistic organisms like pathogenic fungi, seize the moment to take over. Since we know that too many supplements can be taken, if I were you I’d stop all supplements for seven days while following the Phase One Diet. Within seven days of following this diet, you might notice that the yeast problems are beginning to subside. At that point, rotating the antifungal supplements each week or two might have you feeling 63 years young, instead of 62 years old! Q… Hi Doug! I have been trying to do the antifungal diet very strictly, since I have had a thermo gram that came out TH2 and TH3, showing some fibrocystic activity. Have you heard of this being fungal in origin?

Anyway, I have been wondering why eggs are not supposed to have the yolks broken. Also, why oats and quinoa are OK - are they not contaminated with fungus? Can organic corn be de-contaminated by an ozonator machine? Thanks, Mary

A…Mary, let us dissect the word “fibrocystic.”

“Fibrosis” is the formation of scar tissue due to injury or long-term inflammation, and “cystic” means enclosed in a cyst. I remain convinced that what makes bread rise also leads to long-term inflammation inside of our bodies, so I suspect this may have a fungal origin. There is an easy way to determine if this, or any other health condition, has a fungal origin. Simply try the Phase One Diet for 30 days and see if the cyst is shrinking. If it is, we may be on the right track. I’d always share a suspicious lump with my doctor just in case this is something worse than a simply fungal cyst (called an ascomycete).

Thirty years ago, Dr. Gary Price Todd published that breaking the yolk while cooking an egg caused oxidative damage to the egg. I followed his advice for many years until I discovered that fungus, not broken egg yolks, causes oxidation. Quinoa is actually a relative of the spinach family and is a vegetable, not a grain. Once again I stand corrected on my Phase One Diet. Scrambled eggs and a bowl of quinoa are fine for you Phase One aficionados. Finally, the grain corn can be cleansed using ozonation. Unfortunately, the potent and deadly by-products of that corn (mycotoxins) are even heat stable. Neither ozonation nor burning the stalk would alter the mycotoxin component. Thanks for your letter! Q… Hi Doug, I enjoy reading your column in the Guardian every month. I recently have been hearing quite a buzz about a product called Ambrotose produced by the Mannatech company. It is a "Glyconutritional Dietary Supplement," and the main ingredients are Aloe Vera, Rice Starch, Glucosamine HCI and Algae Extract. The product information flyers promise that it "improves cell communication." It has not yet been evaluated or approved by the F.D.A.

Have you heard of this supplement, and if so, what are your thoughts? Thank you, Laura

A… Laura, this poor company seems to always be in trouble by regulators. They MUST be onto something exciting! Many years ago, I spent a day with one of the company founders in their Texas facility and was very impressed. I believe that their product is much like beta-glucan, which I heavily promote on my TV shows. When judging products on the basis of their being FDA approved, please keep in mind that Hormone Replacement Therapies were (and still are) FDA approved despite the fact that they promote cancer growth. Thalidomide, Baycol, Posicor, Vioox, Hismanal, Duract and a host of other drugs were all FDA approved at one time and are now gone because the FDA learned too late of the injury or death caused by each of them.

I’m just thrilled knowing that, thus far, I can eat foods that have not been FDA approved, yet have a far greater impact on good health than drugs that have been FDA approved. I have no axe to grind with the FDA and I know that theirs is a tough job. I have made the decision to live a lifestyle that is conducive to avoiding prescriptive drugs as long as possible. Having said all of this, I’ve been known to chase my carrot juice with beta-glucan!
